Laksa

Laksa is a spicy noodle soup that is more popular in Assam. It is also well popular across Southeast Asian countries such as Malaysia, Indonesia, and Singapore. The rice noodle in a thick broth made with a blend of mackerel, lemongrass, dried chilies, shallots, galangal, turmeric, and spices. The spicy and tangy taste of the soup comes from an ingredient called asam or tamarind. It is topped with shrimp paste, shredded fish, red chilies, onion, cucumber, and lettuce.

Stir Fry Pork

Stir Fry Pork is a favorite Assamese dish made from tender pork and lots of fresh veggies. Sliced pork is stir-fried in a pan with ginger, garlic, tomato, onion, green chili, bell pepper, and broccoli. Added vinegar, soy sauce, sugar, and chili garlic sauce gives a unique flavor and taste to the dish.

Silkworm Fry

Silkworm Fry is a popular snack more commonly seen in the streets of Assam. It’s made of boiled silkworms, mustard oil, sliced onion, chopped ginger, garlic, red chili, and turmeric powder.

Jhalmuri

Jhalmuri is a tasty and popular street snack of Assam made from puffed rice. Jhalmuri originated in Bengali is a well popular street snack in North India. This sweet, sour, and spicy puffed rice mix is prepared from mustard oil, onion, tomato, green chilis, shredded carrot, and coriander leaves. Mustard oil gives a unique taste to this spicy snack.

Thukpa

Thukpa is spicy soup or stew made with noodles. Thukpa is a noodle soup that originated in the Eastern part of Tibet. It is also well popular among the North Indian states of Sikkim, Himachal Pradesh, Assam, Nagaland, and Arunachal Pradesh. This noodle soup prepared with vegetables or meat, spices like chili powder and garam masala make it hot and spicy. Garnished with lemongrass, ginger and fresh herbs bring a fantastic aroma.

Poora Haah

Poora Haah, a roasted duck recipe, is more popular in Northeastern India. The giblet removed whole duck is rubbed with lime juice and salt and marinated. A mixture made from chopped onion, green chilies, spring onions, coriander leaves, vinegar, chili powder, black pepper powder, oil, egg, and chopped giblets stuffed into the duck. The duck roasted over a charcoal fire or hot oven. Poora Haah usually served with boiled rice and roasted potatoes.

Patishapta

Patishapta, a type of pitha, is a traditional Bengali dessert, generally made during festivals or special occasions. It’s a very popular street snack in Assam. Patishapta is a thin pancake made of rice flour, refined flour, semolina, and milk. Coconut, jaggery, or khowa stuffed in the pancake.

Ghugni

Ghugni is a hot and spicy curry chaat made with yellow peas. A very popular snack found in every street food stall of Assam. Made of boiled yellow peas topped with chopped onions, tomatoes, coriander, green chilies, and spices. Ghugni dish cooked with potatoes eaten with roti, paratha, or lusi.

Wonton soup

Wonton soup is generally a Chinese cuisine, which is also well popularly found in the streets of Assam. Wontons are made using a square wrapper filled with ground pork or shrimp with salt, spices, garlic, and chopped green onion. Soups prepared using any meat stock, fish sauce, ginger, garlic, baby bok choy, wonton, and mushrooms.

Keteli Pitha

Keteli Pitha is an Assam style steamed rice cake, popularly eaten for breakfast or as a snack. Keteli Pitha, is widely sold by the street vendors of Assam as fresh and hot. Keteli Pitha is made using rice flour, grated coconut, jaggery, and salt. Rice flour with grated coconut and jaggery, steamed in the lid of a kettle.

Chicken Pakora

Chicken Pakora is a crispy and crunchy deep-fried snack popular in India. Crispy fritter is a great appetizer and very famous street food of Assam. Here, the marinated boneless chicken pieces get dipped in a spicy batter and deep-fried until crispy. Chicken Pakora goes well with chopped onions, lime juice, and tomato sauce.

Chole Bhature

Chole Bhature originated from North India, is a very famous street food of Assam. It’s a fried bread made from maida. It is the most liked dish of Assamese, eaten for breakfast, lunch, or dinner.  It is commonly eaten with spicy and flavorful chana masala. Also, eaten as a breakfast dish along with lassi.

Paneer Chili

Paneer Chili is a popular Indo-Chinese cuisine made from Indian cottage cheese. Paneer Chili is a more famous vegetarian street food of Assam and is prepared in two ways, semi-dry or a gravy form. Sliced Paneer is dipped in a batter and deep-fried. Then, tossed in a spicy mixture containing soy sauce, chili sauce, vinegar, bell pepper, and spring onions. Paneer chili in the dry version is a great starter or appetizer. The gravy version goes well as a side dish for noodles, pulao, naan, or roti.

Jalebi

Jalebi is one of the most popular sweet snacks of North India. Jalebi is a crispy and juicy spiral-shaped sweet, which is the most popular street food of Assam. Made with a fermented batter of gram flour & all-purpose flour, poured in spiral shapes in hot oil and deep-fried. It is then soaked in sugar syrup and served. Jalebi, also eaten with curd or rabri.

Dabeli

Dabeli is a popular street food snack that originated in the Kutch region of Gujarat. It is a common and popular street food of Assam, made using pav bun stuffed with flavorful potato filling and spicy chutney. Then, garnished with pomegranate, roasted peanuts, onions, and sev. Dabeli is eaten as an evening snack with a cup of tea or coffee.

Singara

Singara is a crispy and spicy Bengali samosa. Singara, a potato stuffed deep-fried street food snack popular in Assam. Cone-shaped dough made of maida, stuffed with spiced potatoes, peas, and cauliflower, and deep-fried. Singara goes well with spicy green chutney or tangy sauce.

Kathi Roll

Kathi Roll is an Indian style wrap or roll made of roti or paratha, with different fillings. Kathi roll originated in the streets of Kolkata is rolled with grilled meat kebab. Kathi roll, more common street food in Assam and many parts of India. Stuffings made of a spiced vegetable mix like potatoes, peas, carrot, cauliflower, capsicum, beans, and paneer. Stuffed veggies get enhanced with green chutney and tomato sauce.
